Guinness Chili

Difficulty Scale: 4/10
Prep Time: 10min
Cook Time: 2hrs

Ingredients:
2lbs Ground Beef
2 Yellow Onions Chopped
1 Jalapeno (Whole for mild chili, Minced with seeds removed for medium chili, Minced with seeds for spicier chili)
2 14oz Cans Red Kidney Beans drained and rinsed
1 28oz Can Crushed Tomatoes
2T Tomato Paste
6 Cloves Garlic minced
24oz Guinness Beer
1T Chili Powder
1T Cayenne Pepper
1t Ground Cumin
1T Ground Cinnamon
1T Garlic Powder
1T Onion Powder
1T Brown Sugar
1 Bay Leaf
1T Sea Salt
2T Vegetable Oil
4 Green Onions chopped

1. Heat the oil in a large heavy pot over high heat. Add the beef and brown well, about 10 minutes.

2. Add the onions, chili powder, cumin, cayenne, cinnamon, crushed red pepper flakes, and bay leaf and cook, stirring often, until the onions soften, about 8 minutes.

3. Add the garlic and cook until fragrant, about 30 seconds.

4. Add the Guinness and cook until the foam subsides, about 1 minute. Drink the remaining beer so it doesn't go bad. (I recommend just buying a four pack of pints so you have extra. Nothing beats a good beer while you're cooking. If you don't like Guinness have a Michelob Ultra, Nancy)

5. Add the tomatoes, tomato paste, salt, and brown sugar to the pot. Stir well and bring to a boil. Reduce to a simmer (med/low heat) and cook until slightly thickened, about 1 hour, stirring occasionally to prevent the chili from sticking to the bottom of the pot.

6. Skim off as much fat as possible. Add the beans, return to a simmer, cover, and cook until thickened, about 1 1/2 hours longer.

7. Garnish with shredded cheddar cheese and chopped green onion.

It's the **** dude.....trust me. I made it last weekend, and I'm making it again tonight. What I like to do is take basic recipes, in this case it started out as a basic chili recipe, then I make it my own by trying out different ingredients until it produces something unique. I've gotten really into cooking over the past six months for some reason.

Tips/Hints

- Buy the cheapest cut of beef you can get your hands up. it's usually Flank Steak or skirt steak. Slice it Then do a 2 step marinade on them. 1st step, use water,baking soda, and bit of soy sauce. Let sit for 20+ minutes or so. This process will tenderize the meat extremely well. Then marinade with the sauce you want with a bit of corn starch, then stir fry with your choice of veggies. Cheapest tender steak stir fry.

- Buy from your local LARGE asian grocery stores, as they have the cheapest veggies EVER! Stir fry ANY veggies with Garlic & hot oil, & salt. It'll be absolutely delicious. For example... chopped romain, fresh basil, garlic and salt.

- Pan Fry SPAM then add in whipped eggs. Serve over rice. Yummm.... CHEAP!

Slow Cooked Harvest Beef and Veggies


Prep 10min
Cook 8 hrs
Serve 10

2 1/2lb beef stew meat
1/2 tsp salt
1/2 tsp garlic salt
3 cup baby carrots
1lb medium red potatoes, cubed 2"
1 medium onion, thin wedges
15oz can diced tomato with green pepper, celery and onion
1 envelope beef onion soup mix
2 tsp dried basil
1 1/2 tsp marjoram


rub salt and garlic salt on beef
place beef in slow cooker
add carrots, potatoes, onion, tomatoes, soup mix, basil and marjoram
mix well
cover and cook for 8-10 hours on low


shrimp and pasta marinara

prep 15
cook 30
serves 4

2 tsp olive oil
1/4 c onion, chopped
3 cloves garlic
1 can crushed tomatoes 28oz
1 tsp basil
1 tsp salt
blk ppr
angel hair pasta
1lb lg shrimp, peeled and deveined


heat oil in skillet to med
add onion till soft (3min)
addgarlic
add tomatoes, basil, salt & ppr
boil
reduce heat, simmer 20 min
add shrimp, cook 2-3 muntes (shrimp = pink)


Quick Jambalaya


Prep
Cook
Serve 6

14oz can del monte stewed tomatoes with onions, celery and green peppers
water
10oz can swanson chicken broth
8oz box zartarains new orleans style jambalaya mix
10oz shrimp, cooked, peeled and chopped
6oz hillshire farm turkey sausage, chopped


drain tomatoes, save juice
measure juice then add enough water to equal 6oz
bring mixture and broth to boil in 2 1/2qt pot over medium heat
add all ingrediants to pot
stir and bring to boil
reduce to low, cover
cook for 25 minutes
let stand 5 minutes
fluff rice


Pulled BBQ Chicken Sandwich


Prep 10min
Cook 25min
Serve 6


2lbs boneless, skinless chicken breast
1 1/2c bbq sauce
1/2c cider vinegar
2tbsp brown sugar
hot sauce
hamburger buns

cook chicken in a pan, shred with forks
in a pot, mix rest of ingrediants; bring to a boil
cook for 15 minutes to reduce by half
add chicken to sauce, cook for 5 min

Penne Pasta with Spicy Tomato Sauce


Prep
Cook 25 min
Serve 6


1 Medium Onion, chopped
3 large garlic cloves, minced
1 tbsp olive oil
2lb roma tomatoes, peeled and chopped
1/2 tsp salt
1/4 tsp crushed red pepper
2 tsp crushed dried basil
6oz penne pasta


cook pasta, drain, set aside
in a skillet, cook onion & garlic with oil until tender
add tomatoes, salt and red pepper
bring to boil, then simmer uncovered for 25 min
stir in basil

Chicken Tortilla Soup


Prep 15min
Cook 15min
Serve 8

1/4 cup Butter
1/4 cup AP flour
1 cup Milk
3 cup Chicken Broth (24oz)
8 oz velvetta, cubed
10 oz can mild rotel tomato with chiles
2 cup shredded chicken
1 tsp cumin
1 tsp chili powder
1 tbsp red pepper flake


cook chicken, set aside
In a soup pot, melt butter over low heat.
stir in flour
slowly add broth
add milk, stir
up the heat to medium
stir in velvetta untl melted
add rotel and spices
stir in chicken
cook for 5 minutes
serve with chips and cheese


German Potato Salad


Prep Cook Serve

6 Medium potatoes
8 strips of bacon
flour
1/2 cup vinegar
2/3 cup water
1/4 cup sugar
1/4 tsp dry mustard
1 tbsp olive oil
1 onion


boil potatoes, peel, cool and cube, set aside
fry bacon, crumble, set aside
add flour to bacon fat until just thick enough
add vinegar, water, sugar, oil and dry mustard
cook for 5 minutes
in a large bowl, combine all ingrediants

Catfish Salad
- 1/4 white onion
- 1/6 orange bell pepper
- 3/4 roma tomato
- 1 catfish filet
- Lettuce
- Seasonings
- Brianna's Real French Vinaigrette Dressing

Toss the catfish in a pan with some olive oil and set it on 6-7, as its cooking dice the onions, chop the bell peppers, slice and quarter the tomato, add everything to a big bowl. Once the fish has been flipped, seasoned and finished cooking pull it out of the pan, cut it into pieces and add to the bowl.

its good, you can try Talapia, or any other white fish that is easy to find. If you go with catfish you need to season it heavily.
