Haynes says the CV boot cannot be removed and we have to do the best we can to clean the inner race and the balls. But on the Honda service manual, it says we can remove the CV boot entirely with hammer.

Is there a reason why Haynes has different take on our CV Boot?

I want to remove it and clean the inner race since my CV boot rubber was riped for a long period of time.

It's probably something to do with the fact that haynes has some obligations to the manufacturers to not show how to do everything so that the dealer can charge some cash for a relatively simple procedure.
