you can totally stack spacers. I've had 2 5mm spacers stacked on both rear wheels on my car for almost two years without problems, ya its technically not the right way but it works. (disclaimer if this doesn't work for you I'm not responsible)

Yeah it's not detrimental to the well being of the car, but I would rather just do it the right way regardless. That's just the approach I take with my car though. And w/o hubcentric rings having two spacers would slightly magnify any vibrations imo.
