Does anyone have any pointers or a list of parts that I need to complete this process. I'm starting from scratch with the car and this is the first thing I want to change.

Save the manuals
You'll need to join a forum aimed at your generation, this site is for 98-02 Accords. I'm sure swapping an auto CB to manual has been documented thoroughly.
