yeah, to get the best quality hdr pics you definitely need bracketed photos. while it can be done by post-processing the exposure on one picture the effect is not quite the same

The only way to really do it with one photo is if that photo is in .RAW format. If you're getting a .jpeg, .jpg, .png, etc it won't really turn out like a true HDR photo.
I was using the "HDR Toning" option in Photoshop CS5
This is the new feature that photoshop has available to use a single image and produce an "HDR LIKE" photo.
A real High Dynamic Range image requires multiple shots taken with different exposures, then combined to create the final image. Usually has a lot less grain and other undesirable features.
