How much coolant came out when you replaced the thermostat? It could be that there were still some air bubbles left in the system after doing that and you just haven't put enough back in and/or bled the air out of the system properly.

does it overheat when the car is moving? or only when at idle? if u overheat only at idle, ur water pump is messed up... i would try and bleed the system first and see if tht works first.. just take the radiator cap off and run the car until the coolant starts flowing

There's a bleed screw at the thermostat housing, loosen that while it runs, but add coolant to the radiator as it drains out (keep it topped off).

also check the radiator cap. see if the valve is worn out or not. ripped rubber or anything like that. have the cap pressure tested and see if it holds for 2 mins with out pressure leaking out. if its okay, then your cap is good.

Actually if the water pump is gone it will over-heat regardless, and it will over-heat really really quickly.

If you only over-heat at Idle, and cools down when you start moving again, it means that it is 100% sure it is the Fans. Either the Fuse, Relay, Fan Motor or the Fan Switch... the last being the most common one.

^You could put a box fan in front of the radiator, that would simulate driving the car. (in terms of air passing through the radiator fins)

i believe you can also just open your radiator cap and let your car run to get the air bubbles out with your heater on.

Yeah man, did u just do a dump and refill or did they hook it up to a flush machine, deff check the fans and see when they r coming on at what temp, and check the speed they r running at, and i would also try to burp the coolant system, to make sure there is no air traped in the system, u could also pressure check the radiator, to make sure it is not leaking under a load.....

Bleeding the System is super easy.

Just start the car, there is a 10mm bleeder valve (like on your brake caliper). Crack that open and let it leak for a minute or two, then close it.

The car doesn't need to be hot or anything like that. Just fill the Rad (grab the hoses and squeeze them to get the air out), and then fill your Res. Tank to the Full Line, close everything and then fire her up.
