If you want rear speakers, just get them, don't let other people try to convince you otherwise. I've disconnected my rears accouple of times in various cars, with various speakers and i've just never been happy with it. There is some science to only running front speakers but in the end it's preference really.
As for an amp, just get two if you plan to amp all your speakers (which i definately recommend). There is accouple reasons why i prefer this. First, you have far more options. With a 5 or 6 channel amp, there is always a comprimise. You have much more flexibility with two amps. You arn't limited to an amp that might have enough power for your speakers but not for your sub, etc. Also, if you amp fails, you only have to replace one. Lastly, if you change speakers or subs especially, you don't need to redo your whole system, just the components that need to be upgraded. So with subs, something that handles 150 watts rms might be cool for awhile, but latter you might want to get something that is double, or triple that. I've always gone with mulitple amps, i think it's defienatly the way to go.
