ok.....to sum it all up and add a bit...

1. increasing rim size has no thing to do with ride height, because you will be compensating those difference with tire sidewall/profile. unless you want your speedometer to be way off by putting bigger rim with thicker tire...

2. rubbing issue is more than likely caused by really wide rims and/or offset (lower offset # you go, the more your wheel will stick out). this is solved through.....
a. rolling your fender/qtr panel
b. mounting thinner tire
c. mounting smaller width tire and stretch them

3. front wheel well is bigger than rear due to heavy weight in the front of the car (engine/tranny and what not). id say coilover is the way to go, which you are going to get. just drop it, and mess with ride height a bit, you shold be able to get even wheel gap all around (or 0 gap/even negative gap if you wish....).
