yup and yup.

there are cheaper pieces from metra that don't have the folding pocket...its just a pocket. i have one like that.

That's what I'm goin for.

EDIT with a question.. say I force only the front speakers to play; on a HU that does 50x4, will it be able to route 100x2?

Aftermarket HU puts out 50x4. If only two speakers are being used, will it be able to give 100x2?
50 watts peak, which is an ambiguous number. they only put out 15 rms which is even a stretch. rms isn't the best measurement, but its the best we've got.

headunits don't like being bridged.

This is correct. There were some Pioneer decks in the 90's that could be bridged, but it never seemed to make much of a difference to me.
The reason head unit amplifiers can't be bridged is that the amplifier ICs (Integrated Circuits) used are already internally bridged, and therefore cannot be bridged again.
(I've built amplifiers, both simple IC based designs and MosFET based designs.)
As others have said, even the most high power amplifiers advertised in head units will produce only 15-16 watts maximum before distortion.
