Posted a picture of my set up a couple pages back... That's sunken a little bit...

Alright I think I see so sunken refers to having a slightly negative offset and having your tires inside the fender? I'd want my setup to sit flush with my fender and about a 1 finger gap all around. I think I'm going to go with a 18x8 setup. So what offset should I be looking to get? Also if I can't seem to get a flush lining of wheel and fender then would wheel spacers help and are they safe?

completely the opposite.... the less the offset the more "flush/poke" the rim is to the fender, but then again u have to take in account the width of the wheel

ex. if the wheel is 8" wide a good offset for our cars would be something around +23...that would be pretty flush

Spacers are safe but if you decide to use them whether it be 2mm or 15mm, you need extended stud. Ichiha v2 have a range of spacers with extended studs that are used by many accord owners.

So no spacers? Also, how much would I have to roll you think with no finger gap? Not sure what size tire yet but just in general.

Really doubt you'd need spacers with those specs. Not exactly sure how much but you'll find out once you test fit them. Will you be sitting on natural camber or getting a rear camber kit?
